Who said that profiteroles can be only with sweet fillings? You can make a great impression on your guests by serving profiteroles with different unsweetened fillings. The hardest thing is of course, choux pastry, but I hope that my recipe will help you with that, I tried to make it as detailed as possible and you can find it here http://pastryforgreatbaking.blogspot.com/
I made this pastry for eclairs, but it can also be used as a base for salty snacks for beer. The best thing about profiteroles is that they suit to all kind of measures - from a beer party with a friends to a state reception. You also can experiment with fillings. Since we are dealing with snacks for beer I offer melted cheese, Pâté, smashed eggs with mayonnaise, you can also use meat, fish and vegetables and discover new tastes!

Light pizza with chicken (recipe with pictures)
Why do people get "beer belly"? Research shows that it happens thanks to snacks. Seriously, what are the ordinary snacks? Salty peanuts, chips, dried crusts fried in oil... those are so heavy!
To avoid problems with figure I try to experiment and find a balance between taste and healthiness and let me present my recently invented masterpiece - light pizza with chicken!

It is made quickly and easily, tastes great and is light, especially in comparison with ordinary pizzas and it is great as a salty snack for beer
To make this pizza you need
for pastry
300g of (10% fat) sour cream
2 table spoons of oil
1 table spoon of baking powder
2 -3 cups of flour
1 tea spoon of salt
for the filling
250 g of chicken fillet
1 little onion
2 average tomatoes
1/2 of paprika
4 table spoons of ketchup
1 tea spoon of salt
2 tea spoons of pizza flavoring
80 g of grated cheese
How to make this salty snack for beer
Mix sour cream with salt, baking powder and oil with a spoon. Then Add portions of flour and mix everything until you get a pastry. Do not put too much flour - otherwise the pastry will be too hard - try to reach the right consistence by mixing with hands.
When the pastry is ready put it on the baking tray and spread it with a ketchup. Cut a chicken fillet into little pieces and fry on a pan. Put it on a pastry with ketchup, then put chopped onion, tomatoes and paprika. Sprinkle everything with salt and pizza flavoring and put in the oven (temperature 180C). After 10 minutes take it from the oven, put grated cheese on the pizza, put it back in the oven and wait until it isn't ready (for about another minutes). You'll get a fantastic salty snack for beer which is also healthy!

Mini croissants with cheese (recipe with pictures)
This mini croissants were my first experiment with home-made puff pastry and result was so good that they all (12 pieces) disappeared in the stomach of my boyfriend during 1 hour, as a snack for beer, of course. 12 pieces I got from 250 g of pastry and as they are small, I would recommend to take take 500g of pastry and make 24 pieces.
To make this snack you need
500 g of puff pastry (if you are interested how to make it yourself look here )
150 g of cheese
3 tea spoons of salt
How to make
Take 250g of puff pastry and roll it out (40*30 cm), sprinkle with salt (1.5 tea spoon), cover with half of the cheese (grated) and roll again one more time to stick cheese to pastry.
And you'll get pretty little croissants with cheese like these ones

Salty cheese triangles (recipe with pictures)
I invented them myself last week and made them already two times, because everyone loved them. They are crunchy, easy to make and by the way really cheap. I invented them when after making dumplings left some unleavened dough. Here is it's recipe
http://pastryforgreatbaking.blogspot.com/2009/07/unleavened-dough.html
After you made this dough it has to rest in fridge for at least 1 hour. After that roll it out (40*40 cm) then sprinkle it with salt (2 tea spoons) and some pizza seasoning if you got it and put 80 g of grated cheese.
